At Christmas I find making a large Christmas cake and cutting it into four and then wrapping in foil and placing in the fridge and decorating as required is the best way to go.

This is one of the quarters decorated very simply. It is covered in bought sugar paste icing and then I placed a christmas tree cutter in the middle and filled with coloured cachous balls. These need to be slightly pressed into the icing, so they don't roll off the cake.
